Wild Huckleberry Vols au Vents
The September 2009 Daring Bakers' challenge was hosted by Steph of A Whisk and a Spoon. She chose the French treat, Vols-au-Vent based on the Puff Pastry recipe by Michel Richard from the cookbook Baking With Julia by Dorie Greenspan.
I had been jonesing for a savory filling for my Daring Bakers September challenge, but in the end I took advantage of some great local fruit instead. Our local farmer's market had the last-of-the-season wild huckleberries, and I thought these would go perfectly with some light pastry cream. And to make sure I covered all the bases, I also marinated some local peaches in vanilla sugar and Amaretto and used those too!
A complete step-by-step for making the puff pastry and pastry cream is in my Peaches and Cream Puff Pastry post, and there's a link to a terrific video of Michel Richard demonstrating puff pastry steps. Vols au Vents are really just well-cut and assembled puff pastry dough, with lots of room for creativity in the filling!
