Okay, I cheated with this dish. I had something very similar to it while in school in Austin at Katz's Deli on 6th. It was called Eggs Laura, and it was my favorite interpretation of the classic eggs Benedict. It was poached eggs on potato pancakes with turkey pastrami - and served with horseradish cream. Nowadays Katz's calls that Eggs Broadway , and I haven't had it in probably 10 years, but I had a hankering for it this weekend. Instead of making the trip, I made the dish with piggy instead of turkey.


Mod Benedict (a.k.a. Eggs Laura)
Assemble (per person):

  • 2 poached eggs
  • 1 - 2 potato pancakes (recipe beloq)
  • pan fried sliced ham

Serve with horseradish cream (recipe below)

Potato Pancakes
2 medium russet potatoes, peeled and grated - squeeze dry in a towel to remove all moisture
1 onion, peeled and grated
2 - 3 green onions, chopped
1 egg
1 tsp baking powder
salt & freshly ground black pepper
Peanut/vegetable oil for frying

  1. Combine all ingredients.
  2. Drop by small handfuls into a little oil on a non-stick pan. Flatten lightly with a spatula.
  3. Cook for ~4 - 5 minutes per side or until nicely browned, flipping gently so you keep the pancake together (otherwise it becomes hash browns).

Note: You can keep these warm in the oven while you're cooking all of them - but put them in a single layer on a baking pan. They will get messy if you stack them.

Horseradish cream
Combine freshly grated horseradish and prepared horseradish with sour cream and mix thoroughly. Add more horseradish until the desired pungency is achieved.

Note: Do this early to give the cream time to marinate.

I saw this on FoodGawker and had to click over. Eggs Benedict is my favorite breakfast food ever and I am always looking for variations and exciting new ways to spice it up. I LOVE the idea of serving it on potato pancakes with horseradish cream. How delicious does that sound. Your version looks awesome with the thick cut bacon too! (jessie from cakespy.com)

Runny eggs makes it even better

There's nothing better, in my mind, than crunchy potato pancakes, tangy horseradish cream, and then a nice runny egg yolk running all over the place. Thanks for reading!
