Indian Food from Vij's Cookbook

Indian Food Supreme

Okay, I'll admit - this meal was a bit over-the-top for two people, but just back from Vancouver we were inspired by all of the great food we'd eaten. We found Vikram Vij's cookbook at the Seattle Public Library and made an evening of it - I think we started at 3 in the afternoon and ate around 10pm.

Due to the complexity and number of recipes, I'm not including them in this post - you'll just have to buy or checkout the book yourself. But I will tell you what we made that evening so you have some idea what happened...

We made:
Homemade paneer
Ghee
Homemade chapati
Grilled asparagus in fenugreek seed curry
Halibut with yam curry and black chickpeas
Homemade paneer with spinach and coconut curry sauce
Rice
