First Potatoes
Well folks, the Russian Banana Fingerlings (that were substituted for Swedish Peanut) have arrived! We had a single broken plant thanks to wind or a cat or something, so we decided to dig up the potatoes for that plant to see how things looked. What a surprise when we harvested about 20 absolutely perfect, beautiful little spuds! No blemishes, no bugs - some were still spudlets, but some were pretty good sized. We put them into the ground at the beginning of April and now we have potatoes. We'll wait another week before pulling up more, just to give them a little time to get larger.
Roasted Potatoes
Olive Oil
Salt
Pepper
2 cloves garlic, crushed
2 stems rosemary, leaves removed and bruised
Potatoes
- Preheat oven to 400 degrees at least 10 minutes before you start.
- Cut potatoes into pieces of approximately the same size.
- Toss with the remaining ingredients and place in an oven-safe pan.
- Roast until the potatoes give slightly. The time will vary depending on how many potatoes you have. Start checking on them after 10 - 15 minutes.
