Duck Egg Salad
I don't know if it's our love of deviled eggs, but Todd and I love a good egg salad sandwich. It's fantastically old-fashioned, but I love the smell of mayo and mustard and eggs all mashed together on a piece of toast, and I don't feel nearly as guilty as shoving half a dozen deviled eggs into my mouth.
Imagine our surprise at finding local (Maltby) duck eggs at Pike Place Market recently for $6 a dozen - we grabbed a box and headed home with a baguette.
The eggs had a beautiful color to them, and the yolks were huge and orange-yellow. Higher yolk to white ratio than a chicken egg, it seems. We boiled them up, chopped them, and Todd set to fixing them into a salad by adding whole grain mustard, mayonnaise, celery, chives, marjoram, salt, pepper, and homemade pickles. The duck eggs were definitely richer than chicken eggs, and it made for a luxurious open-faced sandwich. Perfect spring lunch.

love duck eggs, love you
was just thinking about you today so thought i'd pop over, and lo and behold! Duck eggs- some of my favorite things in life. I should probably consider heading to the dr for a cholesterol test since i've never had one and i eat at least 2 dozen duck eggs a week. now i know i can come to your house and you'll make this for me right? i'm rambling, just wanted to send some love & let you know i hope to see you soon. also hope the book is coming along nicely. xx, L
(oh, and to the other commenter who said duck eggs have a season unlike chickens- chicken eggs also have a season we just artificially motivate them to produce outside their cycle. we do the same for ducks too since we as humans apparently deserve whatever we want whenever we want, but i can't bitch too much since i'm a big culprit in the egg department, anyway)
I love deviled eggs and egg
I love deviled eggs and egg salad sandwiches, too. My mom would make deviled eggs as a snack before dinner as a kid and I always found them to be so creamy and cozy. Very creative to use duck eggs. You've definitely inspired me to pick some up at the farmers' market this week -- thanks!
