BLT 2.0
Two years ago, we missed Ruhlman's BLT challenge by a tomato. Well, a tomato and a month. When Ruhlman declared a due date for his all-from-scratch-homegrown BLT challenge, he wasn't thinking of us gardeners in Seattle. When Clevelanders were feasting on summer BLTs in August, I was still waiting for that one tomato to ripen in our cool evenings. This stuck in my craw like a piece of errant popcorn in my crown. How were we ever to have summertime BLTs?
Easy. Bend the rules. This summer, everything else was from scratch - belly cured and smoked from our piggy, bread from our rhubarb-based sourdough mother, arugula and lettuce from our patch. But alas, the tomato was not a fruit of our labor.
Know what? Didn't matter. Best BLT of the summer anyway.
