Homemade Herbed Butter

I think it was the abundance of herbs in the garden this weekend that gave me the idea to make compound butter. This is such a simple thing to do - and something you can enjoy for months if you store the butter in the freezer. And the best thing is - you can use this for anything. Want a little interesting something on that piece of grilled fish? A spread for that toasted bagel? Compound butter, or herb butter, is perfect for that.

Orange Chocolate Chip Biscotti

I'll admit - I was a little skeptical when I saw this biscotti recipe because I wasn't really sure that this would be anything but another chocolate chip cookie. I was wrong. The addition of orange juice, zest, and extract and the differences in the recipe from a standard chocolate chip cookie make for a great biscotti. This is a crunchy but light cookie with a lot of flavor, and depending on the chocolate you choose, its sweetness is complex too.

Orange Vanilla Marshmallows

Homemade marshmallows seemed so Martha, but it was hard to consider myself a well-rounded baker and cook without a little more candy-making under my belt. Right in the middle of a pastry program a few years ago, I had to leave school for work reasons - and they weren't even good work reasons. I missed the quarter that included sugar work, some of the most intimidating work in the pastry kitchen, and I've been slow to get back to my studies (all of which I do at home now).
