Good Grilled Cheese

Sometimes a grilled cheese sandwich is just a grilled cheese sandwich. It's usually like that when I get them at the cafeteria at work, or the greasy spoon down the street. That's not what lunch was the other day. We sort of lost our minds with all of this pantry stuff we'd made, preserved, and gathered recently.

Grilled Pork Chops and Beetroot Salad

Chops courtesy of Timmy, the sweet piggy. Dinner courtesy of Fergus Henderson. Or at least the green sauce and beetroot salad were from his cookbook, Beyond Nose to Tail. They turned out really quite lovely, don't you think?

I copied the recipes exactly from the book because I think the instructions are so whimsical. Hope you enjoy them as much as I did!

I first tried this dish at Momofuku Noodle Bar in NYC, l'enfant terrible David Chang's ode to high quality Asian comfort food. I have to admit, I was drawn to the restaurant by the reputation of the ramen, but I switched my allegiances to their Berkshire pork buns and this dish in no time. On his menu he calls these things roasted rice cakes, and it wasn't until I explained it to my friend Evelina that she was able to tell me the real name.
