Rose Ginger Lemon Syrup

Still smelling of the Jameson Distillery tour, we ambled to the park just outside the factory gates in Midleton and unwrapped our lunches. We'd run to the English Market in Cork that morning and loaded up at the Salad + Sandwich Bar (I swear, some of the best sandwiches I've ever eaten) and then grabbed drinks at a little organic stall further down the alley.

The flash burned a ghostly image onto my retina, and the gray fingers clawed into the edges of my brain. I blinked and blinked again. After a few minutes I could see, but the negative was in there real good. It was a few hours before I stopped seeing the explosion when I closed my eyes.

Beautiful Pie Crust

After making my first really successful crust at Kate McDermott’s Art of the Pie class, I knew I’d need some practice quickly to reinforce what I’d learned. I sent a message to friends: bring me a pie pan and a few bucks and I’ll make you a pie. I got no shortage of takers.
