Don’t think of this dessert as jell-o. It’s more like a gentle perfume that you consume, the smell and sweetness lingering on your tongue and in your nose until something else takes its place.

I was thinking about afternoon tea when I decided to try this variation of panna cotta. If Earl Grey tea tastes wonderful with a dab of milk, why not cream with a dab of Earl Grey?

There are a couple of things I might change the next time I make this recipe (which I present in the original below - modify it in whatever way works for you!):

  • Use a tea strainer or fine mesh sieve to remove the leaves, not a standard strainer.
  • Use less tea. A little goes a long way.

Homemade marshmallows seemed so Martha, but it was hard to consider myself a well-rounded baker and cook without a little more candy-making under my belt. Right in the middle of a pastry program a few years ago, I had to leave school for work reasons - and they weren't even good work reasons. I missed the quarter that included sugar work, some of the most intimidating work in the pastry kitchen, and I've been slow to get back to my studies (all of which I do at home now).


Honey Panna Cotta with Green Cardamom

We recently went to Volterra, a little Italian restaurant in Ballard that's been getting a lot of press lately. Dinner was pretty good, but Todd's dessert was the shining star: a lovely panna cotta served with sliced strawberries (a little out of season, but perfect) and apricot compote. I took the idea home and devised my own interpretation, with a little help from the Splendid Table.
