Fish Loaf

Each year for Thanksgiving, Todd's family likes to do an out-of-the-ordinary dinner. This tradition's been going on for years, and each year there's always a new dish with an interesting twist. Last year, for example, Todd's mom had hit a deer on election night and not wanting to waste it, her son-in-law came out to the scene of the accident, field-dressed it (it's legal in their state), and we had it for Thanksgiving.

I was one of those weird half-Chinese kids who didn’t like congee. When my extended family would get together, they’d make giant pots of the stuff with an array of toppings, and I would hide in my bowl of ramen. I just didn’t think it had much flavor – plain boiled rice porridge.

When my grandmother and mom were in town a few weeks ago, we planned one gigantic meal to cook in our tiny, tiny kitchen. There were only four of us eating (not counting the dog, who got plenty of handouts that night), but there were five dishes of pretty epic size.

After our recent success with a salt-crusted pork roast, Todd and I decided to give fish a try. Friends had spoken of the exquisite juiciness of the fish, so we loaded up and headed to fisherman's terminal in Magnolia to pick up something fresh (and whole). When we arrived it was pretty close to closing, but we managed to score a lovely whole trout for under $5, and with all of the extra salt we'd bought for the pork dish, we had everything on hand to make a decent meal.
