After Lucy Bland came back from their West Coast tour recently, I found jars upon jars of jams and fruit spreads laying around the band gear - I guess they had all bought while on the road, fearful they'd run out of food while driving in the middle of nowhere. Anyway, I was determined to use up some of the stash because I wanted room in the pantry for jams and jellies not yet bought - plus, I thought it would be simple to recreate pop tarts with a little homemade pie dough and jam.

It was harder than I thought.

I got this recipe out of delicious magazine (from Australia), Vol 5 issue 1. I always love their stuff - it's beautiful and tropical. And yes, I realize I've violated all sorts of locavore codes by going with such a tropical dessert, but it looked (and tasted!) sooooo good. I have a couple of notes at the bottom of the recipe in case you want to try this - there are some things I'd probably do a little differently.

We recently went to Volterra, a little Italian restaurant in Ballard that's been getting a lot of press lately. Dinner was pretty good, but Todd's dessert was the shining star: a lovely panna cotta served with sliced strawberries (a little out of season, but perfect) and apricot compote. I took the idea home and devised my own interpretation, with a little help from the Splendid Table.
