Tropical Carrot Cake

When my friend Sarah wrote that she was looking for a good carrot cake recipe, it occurred to me that I don't really have one in my repertoire. My family was never big on carrot cakes, so I never got one passed down from Granny or any of my baking aunts. But not wanting to let Sarah down, I went on a hunt for something a little different. I figured everyone had a standard carrot cake recipe, but I wanted to find something that I hoped would make that wedding cake she's working on a real showpiece.

Todd's been enjoying the pickles from the Boat Street Cafe, especially their carrots and raisins (I had a pickled fiddlehead at a dinner there recently - it was lovely). We knew we wanted to make our own pickled carrots, but we have such lousy luck in the garden with carrots. Not enough heat, hungry critters, you name it. But this weekend we got lucky. We took a stroll through the U-District Farmers' Market and came upon some real beauties that immediately made it into the pickle jar.

I love the fresh snow peas from the garden, but always end up getting sick of stirfry by the time they are finished. So, here I was trying to come up with another use for them, and also trying to get rid of some of the carrots that were piling up in the fridge. And I think this was one of Todd's best creations--kind of a spring roll in a pot.
