We're quickly moving to the end of our first pig's offerings - just in time, too. I got a message from Rebecca a few weeks back that said we might be getting close at the beginning of July, which is really just a couple of weeks away.

Just about this time last year we went looking for corned beef - or actually the raw brisket with which we could make homemade corned beef. In our neighborhood, we had a couple of options - buy the pre-pack stuff from Safeway that already had pickling spices in it, or pay a mint and buy a chunk of brisket from Whole Foods. We decided to just stay away.


Beef & Guinness Pie with Irish Soda Bread

With the weather still a little cold, Todd was itching to try out a beef & Guinness pie recipe he'd seen on Saveur.com. I wanted to bake something, so I accompanied the pie with soda bread, and of course we did this the night before St. Patrick's. The pie was so-so - the crust was nasty (it was a nice store-bought puff that had been languishing in the freezer too long), and there was a lot of sauce that didn't have a great flavor. With some variation, I think this will be an excellent recipe for our files!
