Bacon Pecan Bars

I'd seen a recipe for Bacon Pecan Bars recently and was dying to give them a try. What could go together better? I love bacon pecan waffles, and hoped that these would translate just as well. I made a few miscalculations along the way that resulted in bars that were less than I'd expected, but I think with a few adjustments these would be great next time.

I don't know what I was thinking - well, I knew we had a log of goat cheese that needed to be eaten, and a tiny bit of home-cured bacon in the fridge that wouldn't be enough for a real meal. I decided at the last minute to make a quiche. That's not the surprising part, quiches are a piece of cake. It's always the crust that causes me to catch my breath.

What's so special about a BLT, you ask? And why does it warrant a post of its own?
Because with the last piece of pork belly, Todd and I made bacon. Actually, Todd did all of the hard work of curing and seasoning it. I just smoked it. And let me tell you...it was the best damn bacon we'd had in a very long time.


Merguez Pizza and Bacon & Mushroom Pizza

Pizza Manna

Pizza's an all-around good use for the homemade sausage we've made - and this dinner packed a two-fer with two different kinds of pork represented. We used our recently made merguez on one pizza, and the other we used some bacon. Both have whole-wheat pizza dough that we bought from Trader Joe's - we would normally make this ourselves but decided to take the simple route that day.
