Two years ago, we missed Ruhlman's BLT challenge by a tomato. Well, a tomato and a month. When Ruhlman declared a due date for his all-from-scratch-homegrown BLT challenge, he wasn't thinking of us gardeners in Seattle. When Clevelanders were feasting on summer BLTs in August, I was still waiting for that one tomato to ripen in our cool evenings. This stuck in my craw like a piece of errant popcorn in my crown. How were we ever to have summertime BLTs?

I'd seen a recipe for Bacon Pecan Bars recently and was dying to give them a try. What could go together better? I love bacon pecan waffles, and hoped that these would translate just as well. I made a few miscalculations along the way that resulted in bars that were less than I'd expected, but I think with a few adjustments these would be great next time.


Bacon and Goat Cheese Quiche

I don't know what I was thinking - well, I knew we had a log of goat cheese that needed to be eaten, and a tiny bit of home-cured bacon in the fridge that wouldn't be enough for a real meal. I decided at the last minute to make a quiche. That's not the surprising part, quiches are a piece of cake. It's always the crust that causes me to catch my breath.

Our first weekend with Timmy was a whirlwind of productivity. We got ambitious and worked on 2 different kinds of sausage, and Todd also cured pancetta and bacon! I've covered the bacon recipe before, and Pancetta is pretty close but I'm going to list it too. All of the recipes in this post come from Ruhlman/Polcyn's Charcuterie.
